mice are nice

 

Chocolate Covered Cherry Mice

semi-sweet chocolate chips (for melting/dipping)

maraschino cherries with stems

Hershey's kisses (unwrapped)

sliced almonds (ears)

wax paper

First, empty cherries into colander and rinse with cool water.  Spread cherries on a bed of paper towels and allow the excess water to soak into the towels.  Wet cherries won't stick to the melted chocolate.  Melt semi-sweet chocolate chips using your preferred method.  Here's a helpful link. When melted chocolate is ready, dip a cherry into it.  Pull out the cherry and 'stick' onto an un-wrapped Hershey's kiss with the cherry stem sticking out the back (for the tail).  Place on wax paper carefully.  Take two almond slices and gently stick behind Hershey's kiss to make ears.  I put my mice into the refrigerator to help speed along the drying time of the chocolate.  Keep refrigerated in an air tight container. 

These would be SO cute atop cupcakes!
